Instructions
Caramelizing the Pan
- 1
In a 7-inch (16-18cm) round tube mold that fits comfortably inside your air fryer basket, melt the sugar over low stovetop heat until deep amber caramel forms.
- 2
Carefully splash in the warm water, swirl to dissolve, and coat the bottom and sides of the pan. Allow to cool completely.
Blending and Air Frying
- 3
In a blender jar, combine eggs, milk, water, powdered milk, sugar, and vanilla extract.
- 4
Blend on medium speed for 2 minutes until frothy, smooth, and completely blended.
- 5
Gently pour the custard mixture through a fine sieve into the caramelized mold.
- 6
Place the pan directly into the air fryer basket. Note: No water bath (bain-marie) and no aluminum foil covering is needed!
- 7
Bake at 180°C - 200°C (360°F - 390°F) for 20 to 25 minutes.
- 8
Test with a toothpick in the center: it should come out clean and the top should be beautifully golden and lightly toasted.
Chilling and Serving
- 9
Carefully lift out the pan and let it cool completely on the counter.
- 10
Transfer to the refrigerator for at least 3 to 4 hours (or overnight) to set firmly.
- 11
Warm the base over low stove flame for 10 seconds to loosen the caramel, invert onto a rimmed dessert platter, and serve chilled.
Chef's Golden Secrets
- • Pan compatibility: Most 3.5L to 5L air fryers easily accommodate a standard 7-inch (18cm) flan tube pan.
- • Milky richness: High-quality whole powdered milk delivers a luxurious milky flavor and velvety texture that rivals traditional condensed milk flans.
